Located a few kilometers away from the picturesque medieval walled city of Carcassonne, UNESCO World Heritage, the Haute Couture micro négoce Domaine Calmel & Joseph crafts a panel of authentic terroir driven wines from Languedoc Roussillon. Calmel & Joseph is involved in all the stages of the process from the initial vineyard management to vinification and bottling. The low intervention winemaking is done by Laurent Calmel, while Jérôme Joseph, the business side, travels the world as the Ambassador of the Domaine. The pair also owns a stunning, organically farmed, 200 hectare property in the village of Montirat. Twenty 20 hectares is under vine, the rest being devoted to biodiversity with olive groves, lavender Fields, almonds orchards and beehives.

Organic. Chardonnay (estate grown + negoce) from a mixed terroir of volcanic base with some clay and limestone. The climate is typically Mediterranean, warm and sunny with low rainfall. Winters are mild, summers are hot and the usual dry conditions ensure that the grapes ripen fully. Vines are ploughed; no weed killer is used. Pruning is short to regulate the vine’s growth and its yields. Handpicked at night, in two passes. Fermentation is temperature-controlled 15°C (no malolactic fermentation). Thirty percent of the production is aged for 3 months in French oak barrels.

Organic. Expressive and delicate floral aromas, wild honeysuckle and lemon verbena, white peach, apricot with hints of aniseed. This is a rich expression of Chardonnay with a silky texture, soft herb and lemon veil drawn over white stone fruit. A light note of vanilla pod and cardamom. All the components are there, drawn in by a tense thread of acidity. The finish is moderately persistent, that makes it a very versatile wine.

Organic. The terroir of Saint Chinian is better known for its reds than its whites, but this apparently arid and rocky land is in fact very varied. The altitude, the freshness, and the depth of certain soils lend themselves perfectly to making fine white wines. This cuvée is sourced from 3 plots rooted in a mix terroir of limestone and clay (sourthern part of the appellation).

40% Grenache blanc, 30% rolle, 20% roussanne, 10% viognier. Vinified separately and aged on fine lees for one month. Blending. Aged 9 months in 50% barrel, 50% concrete vats. No added sulphites until the spring.

Organic. Delicate nose with floral notes of white flowers and broom, followed by apricot, vanilla, star anise, laurel and tarragon herbs. There is superb length on the palate with menthol, vine peach, and apricot, finishing on aniseed, fennel, and lovely mineral notes. A wine of great ageing potential which will develop splendid oxidative notes over time.

Located in the eastern part of the Pyrenees mountains, the Roussillon amphitheater is open to the Mediterranean on one side and surrounded by three mountain ranges: the Corbières to the North, the Pyrenees – with Mount Canigou – to the West, and the Albères to the South. The region enjoys the perfect Mediterranean climate with dry, hot summers, and mild autumns and winters. Côtes du Roussillon Villages is a step up in quality from the more generic Côtes du Roussillon appellation.

30% grenache, 30% syrah, 20% mourvedre, 20% carignan. Vinified separately in tanks. Blending. Aged 12 months in tanks. No oak

The powerful and balanced nose offers a bouquet garni of spices, with blackberry, fig, cinnamon, and grilled aromas. In the mouth it is supple with well-integrated, plump tannins and superb aromatic expression taking in laurel, pepper, blackcurrant and yellow plum, typical of this most southerly terroir of our region. The Roussillon is fiercely Mediterranean, seared by the sun, and the wine produced in such a harsh environment is something of a small miracle!

Discover the tiny appellation Côtes du Brian tucked in between St Chinian and Minervois. The mediterranean climate displays low rainfall and mild temperatures, at an altitude between 250 and 350 m. The prevailing wind is dry, from the northwest, coming from the Montagne Noire.

Organic. From vines planted in 1895 in a clay limestone terroir. Hand-picked, destemmed but not crushed before being going into vat for a long maceration/fermentation. The wine is then racked and settled several times before undergoing its malolactic fermentation in vat over the autumn. Aged in concrete vats for six months.

‘‘Although the wine smells a bit like caramelized beef, those steak-sear umami notes fill the palate, it’s remarkably fresh and the fruit is pulsing with life. Dark plums, umeboshi saltiness and tang, dark gingerbread, ginger-root skin and tamarind. Masses of garrigue packed into tannins with the texture of old driftwood. Earthy, sautéed-mushroom finish. Organic. The Marselan varietal is a cross between Cabernet Sauvignon and Grenache Noir. It was created in 1961 near the town of Marseillan by the INRA research body and is now planted in vineyards in the Languedoc, Rhône Valley, Spain, the North Coast of California, Switzerland and Israel. Estate grown. Vinified in stainless steel tanks. Aged 12 months in concrete tanks.

Organic. The colour, dense as always, that veers towards an inky, blackish violet, is an indicator of the generosity of this wine. Black fruit, quince and spices subtly intertwine to finish on superb jammy aromas. Mouth-filling and smooth, its notes of blackcurrant, blackberry, licorice and spices are accompanied by powerful tannins that retain a magnificent and surprising freshness. Perfect for drinking throughout the seasons.

50% mourvèdre, 25% syrah, 25% grenache. Terroir composed of clay limestone with cryoclastic limestone gravel within a deep sandy clay soil. Traditional vinification in concrete vats. The grapes are destemmed but not crushed. Punching down at the beginning of fermentation then light moistening of the cap daily. 100% aged in barrel (20 % new, 40 % barrels one wine old and 40% barrels two wines old) for six months.

Organic. Delicate and powerful nose of blueberry, blackcurrant, and elderberry, evolving to white flowers, eucalyptus, and vanilla, it is also reminiscent of candied fruit cake. The palate opens cleanly and smoothly with fine, persistent tannins. Notes of black fruit, notably blackcurrant, followed by notes more evocative of the Mediterranean, such as black olive, dill, white pepper, peppermint, and liquorice sticks. Good ageing potential.
