Maison Jacoulot: A Legacy of Fine Spirits in Burgundy

Founded in 1891 by Vincent Jacoulot in the heart of Romanèche-Thorins, Burgundy, Maison Jacoulot is a pioneering distillery that has made a name for itself by crafting some of the finest Marc de Bourgogne and Fine de Bourgogne. As one of the first producers to bottle Marc de Bourgogne under its own label, Jacoulot helped elevate this traditional Burgundian spirit from a rustic byproduct of winemaking to a refined and elegant eau-de-vie. Today, the distillery continues to uphold its reputation for excellence, combining time-honored techniques with modern craftsmanship.

Terroir and Distillation Process

The estate is located in the heart of Beaujolais, close to the iconic Moulin-à-Vent vineyards . The soils in this region are composed of granite and limestone, which contribute to the distinctive qualities of the wine—and, by extension, the pomace used in distillation. Jacoulot specializes in a process called extra égrappage, where the grape stalks are meticulously removed to prevent excess tannins, resulting in a smoother, fruitier distillate. The pomace is distilled in traditional copper stills, a process that ensures the preservation of the grape’s natural aromas and flavors.

In addition to its classic Marc and Fine de Bourgogne, Jacoulot has expanded its portfolio to include a variety of fruit liqueurs such as Crème de Cassis, made from locally sourced blackcurrants, and Limoncello, crafted from Sicilian lemons. The distillery has also ventured into the world of whisky and rum, aging select expressions in Burgundy barrels to infuse them with a distinct regional character.
